Croissant French Toast with Lemon Mascarpone Cheese

Treat yourself to a royal breakfast on a lazy weekend morning. A great way to utilise fresh or old croissants with a soft, crispy french toast and decadent mascarpone spread.

French Toast Croissants and Filling

  • 4 Eggs
  • 1/4 Cup Milk
  • 4 Croissants
  • 1 Tsp Olive Oil
  • 1 Cup Mascarpone Cheese
  • Raspberry Jam
  • Fresh Berries (of your choice)
  • 1 Tbs Honey
  • 1 Tsp Vanilla Extract
  • 2 Lemons

Home Made Mascarpone

  • 1 Cup Heavy whipping Cream
  • 1 Tbs Vanilla Extract
  1. Mix one cup of mascarpone cheese with the zest of 2 large lemons and add the honey and vanilla. Mix well.
  2. Beat the eggs and milk in a bowl, then dip the croissant halves in the mix. Heat 2-3 tbs of oil and gently toast the halves, turning over after a minute or so.
  3. Spread raspberry Jam on the bottom half of the croissant
  4. Top each croissant half with 1 tbs of the mascarpone.
  5. Add the fresh berries and press the 2 halves together.
  6. Drizzle with Honey and serve.

To make homemade mascarpone

  1.  Pour the heavy cream in a saucepan, and slowly bring to a low simmer (180 °F). Let it simmer for 2-3 minutes over low heat, then add the fresh lemon juice, and simmer for another 3 minutes.
  2. Remove from heat, and allow to cool off to room temperature. It will thicken slightly but will not curd. Line a strainer with 4 layers of cheesecloth and place over a bowl. Pour the cream in the strainer, tie the ends of the cheesecloth together, and cover with plastic wrap. Leave in the fridge overnight for a softer mascarpone cheese, or longer for a harder consistency.

You can easily whip a batch of this sumptuous homemade whipped cream and have it on hand to prepare these strawberry shortcake croissants for yourself at any time! Freshly slicing the strawberries and croissants in half, you can either use a decorative tip on an icing bag or just use a butter knife! It doesn’t have to be pretty to be tasty!

Easy Strawberry Shortcake Croissant Recipe

The easiest and most delightful summer dessert. These Strawberry Shortcake croissants are so easy to prepare serve and enjoy.

  • 1 Cup Heavy Whipping Cream
  • 3 Tbs Powdered Sugar
  • 1 Tsp Vanilla Extract
  • 2 Tbs Cream Cheese
  • Fresh Strawberries
  • 4 Fresh Noisette Croissants
  1. Add your heavy whipping cream and powdered sugar into a bowl and blend well until peaks form.
  2. Add in your vanilla extract and beat or whip until well combined.
  3. Cut your croissants in half.
  4. Slice your strawberries.
  5. Fill a piping bag with a frosting tip (if you wish for your whipped cream to be decorative) and pipe the whipped cream onto one sliced side of the croissant.
  6. Add sliced strawberries to the top of the whipped cream, fanning them out evenly across, and top with the other side of the croissant.
  7. Sprinkle powdered sugar on top.
  8. For the decorative croissants with a “Santa hat” on top, slice the top of the strawberry off, frost the cut end of the strawberry with a little extra whipped cream and place it on top of the croissants.
  9. Pipe a little whipped cream on top for the wooly top to the “hat” and serve.
